Monday and Tuesday last week were sort of write offs as far as cooking was concerned so we had a couple meals left over for the weekend and we decided to tack on the tilapia at the end of this week. Rick’s favourite dish was the pork loin, which I just served with green beans as I’d failed to get more potatoes. I was partial to the mushroom ragu, although I would have preferred a greater mix of mushrooms. We used regular and king oyster mushrooms, but something a little stronger like some shitake or portabello would have been nice too. The cantonese chicken was pretty “meh”, although I’m sure some sriracha would have perked it up.

Thursday: Herb Mustard Pork Loin with Maple-Roasted Sweet Potatoes and Parsnips
Friday: Pumpkin Seed Encrusted Tilapia
